Swedish Meatball Recipe with Beef and Pork
- 10 lbs beef
- 10 lbs pork
- 2.5 cups minced parsley
- 0.8 oz Allspice
- 0.8 oz Nutmeg
- 3.5 cups yellow onion grated
- 2.4-3.3 oz salt
- 0.8 oz black pepper
- 40 garlic cloves, minced
- 7.5 cups breadcrumbs
- 20 large eggs
- pint lard for frying
- mix ingredients in mixer until they just begin to adhere.
- extrude them using the large horn
- fry in a large skillet working in batches
- add gravy ingredients and simmer them together
Gravy
- A Quart + of lard
- 5 cups flour
- 2.5 gallons bone broth
- 3 tablespoons salt
- 2.5 teaspoons of black pepper
- 10 tablespoons lemon juice
- 2.5 teaspoon allspice
- 2.5 teaspoons nutmeg
- 10 cups heavy cream
