Processing costs for a pig are set by the processor - as of January 2016 a local custom processor charges $35 per head plus $0.69 per pound for processing poor plus extra charges for curing bacon, making sausage and curing hams if those options are selected by the customer. A pig cut is the standard manner usually ends up costing around $1 per pound for processing.
