Swedish Meatball Recipe with Beef and Pork

  • 10 lbs beef
  • 10 lbs pork
  • 2.5 cups minced parsley
  • 0.8 oz Allspice
  • 0.8 oz Nutmeg
  • 3.5 cups yellow onion grated
  • 2.4-3.3 oz salt
  • 0.8 oz black pepper
  • 40 garlic cloves, minced
  • 7.5 cups breadcrumbs
  • 20 large eggs
  • pint lard for frying
  1. mix ingredients in mixer until they just begin to adhere.
  2. extrude them using the large horn
  3. fry in a large skillet working in batches
  4. add gravy ingredients and simmer them together

Gravy

  • A Quart + of lard
  • 5 cups flour
  • 2.5 gallons bone broth
  • 3 tablespoons salt
  • 2.5 teaspoons of black pepper
  • 10 tablespoons lemon juice
  • 2.5 teaspoon allspice
  • 2.5 teaspoons nutmeg
  • 10 cups heavy cream
