Drying can be an easy way to preserve herbs.
Procedure
Most herbs are best cut before they flower and best harvested early in the morning when essential oil content is highest.
- cut a large handful of herbs about 2-4 inches above the soil surface
- be sure not to cut more than 2/3 of the plant if you want it to grow back in the same season
